Food to Fuel your Ride
Eating plenty of carbohydrates has long been considered the key to helping your stamina on a cycle ride. From a pre-ride pasta party, to a breakfast time banana, or even downing a can of emergency fizzy drink in order to finish a particularly tough climb – I have plenty of fond memories of carb (over)loading!
One thing I have enjoyed about my 10 years at Exodus has been the opportunity for culinary indulgence in a wide range of countries. Here are three of my favourite dishes for cycling and advice on where to find them…
Pasta
It is an obvious place to start of course but there are hundreds of unusual varieties to try on our trips, such as ‘Sagne Ncannulate’ in Puglia or ‘Bigoli’ in Venice.

Pho Bo
This delicious noodle soup from Vietnam is made with beef, stock, rice noodles and garnished with bean sprouts, herbs, lime and chilli. It is often eaten at breakfast and makes a fantastic pre-ride meal!

Tagine
This is a slow braised stew, taking its name from the clay pot in which it is both cooked and served. The result is fantastic tender meat and aromatically spiced vegetables. Delicious!
