I did some kayaking there in 2005 (just 2 days) as part of Exodus' Lycean Activity Week. It was very naturally rugged and beautiful, historically fascinating. The paddling was easy and the Turkish people were wonderful (the most friendly of all the travels I've ever done).
In addition to your normal camera, i recommend that you bring a throw-away underwater camera (if you don't have a marine housing for your normal camera) so that you can take a couple of underwater shots. Oh, and bring plenty of really high spf sunscreen, and a broad brimmed hat and bandanna/kerchief that you can use to cover the back of your neck.
I'm almost jealous of you. I'd love to do it again.
