Our base, the Cortijo Rosario, is surrounded by arable land and rolling hills dotted with olive trees and sunflowers. The countryside is tranquil, timeless and the area is rich in Moorish history.

From the great cities of Seville and Cordoba to the dramatic hill town of Ronda and the 'white villages' of Andalucia, there is a wealth of culture to indulge in.

This is a relaxing trip combining cultural highlights and the peace of the Andalucian countryside with great food and wine.

SPANISH LANGUAGE WEEK

Learn Spanish while you relax in our comfortable lodge in the Andalucian countryside, then enjoy using your newly learnt skills as you explore Moorish cities and Pueblos Blancos. Short sessions during the week from our experienced local teacher will provide basic language skills, which you can practise with the Spanish staff, helping you feel like a local in no time. LEARN TO COOK SPANISH STYLE!

Learn how to prepare the signature dishes of Spain on selected departures
(All departures from 02 March until the 01 June 2013).

Learn to cook PaellaThe Cortijo Rosario catering team will demonstrate how a true paella is made with the tricks you don't normally get from recipe books.
Paella varies in its ingredients in different regions of Spain - this is the andaluz version using long grain rice - and Maria (our queen of the kitchen) will share her secrets!

She will also prepare Gazpacho, a typical cold summer soup that originates from Andalucía.
And what could be the only thing to drink with these two dishes? Sangria, of course! Rocio will demonstrate the Cortijo version (there are many!) showing you how it is made.

Once all is finished you will sit on the terrace to eat and appreciate why these dishes are so popular.
To help you remember how all is done you will receive a free 'Cortijo Cookery' book as a memento. As well as lots of recipes it has pages of photos and information about the most famous parts of Andalucía.

A WEEK IN ANDALUCIA
Day 1
Fly to Malaga; transfer to Cortijo Rosario.
Day 2
Take a half-day guided walk through nearby hills and olive groves or relax by the pool.
Day 3
Guided walk through Olvera and Setenil, the famous 'pueblos blancos' (white villages built by the Moors).
Day 4
Explore endless alleys through Moorish and Jewish quarters of Cordoba, the Moorish capital of 'Al Andalus'.
Day 5
Free day for sightseeing, self-guided walks or relax by the pool.
Day 6
Visit Ronda and the oldest bullring in Spain; cross Andalucia's highest road and climb up to the Moorish fort.
Day 7
Marvel at beautiful Moorish and 'Mudejar' architecture and enjoy the gardens of Seville.
Day 8
To Malaga; fly to London.
